Balsamic Baked Chicken with Mozzarella

I stole this recipe for Balsamic Baked Chicken with Mozzarella from Cafedelites.com. This tasty baked chicken recipe is a one-pan meal. Chicken is placed in a baking dish. Seasoning is rubbed on the chicken. Then cherry tomatoes and chopped onions are placed around the chicken. A balsamic mixture is poured over the chicken. The chicken is baked in the oven then shredded cheese is placed on top and broiled. Everyone loved this dish, I was even told the chicken tastes like pizza.

Preheat oven to 430 F. Place chicken breasts in a baking dish, drizzle with 2 tbsp olive oil. Then season with ½ tsp oregano, ½ tsp basil, 1 tsp salt, pepper and 1 tbsp minced garlic. Rub seasoning over chicken.

Next, arrange 2 cups halved tomatoes and ¼ cup diced red onion around chicken in the dish.

In a small bowl whisk together ¼ cup balsamic vinegar, 1 tbsp brown sugar and ½ tbsp minced garlic.

Then pour mixture over chicken breasts, flip each breast in sauce to evenly coat.

Bake in preheated oven for 20 to 25 minutes or until no longer pink in middle.

Then sprinkle with ¾ cup fresh shredded mozzarella cheese and broil for 4-5 minutes or until cheese is melted and golden.

I like to serve the chicken on top of Cheesy Orzo.

  • 4 skinless chicken breasts 9 oz each
  • 2 tbsp olive oil
  • ½ tsp oregano
  • ½ tsp dried basil
  • 1 tsp salt
  • Cracked black pepper
  • 1 ½ tbsp minced garlic 5-6 cloves
  • 2 cups grape or cherry tomatoes halved
  • ¼ cup red onion peeled and sliced
  • ¼ cup balsamic vinegar
  • 1 tbsp packed brown sugar
  • ¾ cup fresh shredded mozzarella cheese
  • 2 tbsp fresh chopped parsley or basil garnish

Instructions
