This tasty baked chicken recipe is a one-pan meal. Chicken is placed in a baking dish. Seasoning is rubbed on the chicken. Then cherry tomatoes and chopped onions are placed around the chicken. A balsamic mixture is poured over the chicken. The chicken is baked in the oven then shredded cheese is placed on top and broiled.

Ingredients
4skinless chicken breasts9 oz each
2tbspolive oil
½tsporegano
½tspdried basil
1tspsalt
Cracked black pepper
1 ½tbspminced garlic5-6 cloves
2cupsgrape or cherry tomatoeshalved
¼cupred onionpeeled and sliced
¼cupbalsamic vinegar
1tbsppacked brown sugar
¾cupfresh shredded mozzarella cheese
2tbspfresh chopped parsley or basilgarnish
Instructions
Preheat oven to 430 F.
Place chicken breasts in a baking dish, drizzle with oil. Season with oregano, basil, salt, pepper and 1 tbsp minced garlic. Rub seasoning over chicken. Arrange tomatoes and red onion around chicken in the dish.
Whisk together balsamic vinegar, sugar and remaining garlic. Pour over chicken breasts, flip each breast in sauce to evenly coat.
Bake in preheated oven for 20 to 25 minutes or until no longer pink in middle. Sprinkle with cheese and broil for 4-5 minutes or until cheese is melted and golden.
Garnish with parsley and serve with rice or pasta, drizzled with pan juices.
