One Pan Parmesan Crusted Chicken with Broccoli

I stole this recipe for One Pan Parmesan Crusted Chicken with Broccoli from a cookbook called Add a Pinch. This one pan meal is great for a weeknight. Chicken breasts are arranged in the center of a baking sheet. Broccoli is placed around the chicken. Everything is drizzled with oil and sprinkled with seasoning and baked for 30 minutes. Parmesan cheese, parsley and garlic is mixed together and spread over the chicken. The pan is then broiled until the cheese melts and the broccoli is browned.

In small bowl, add 2 minced cloves of garlic, ½ cup freshly grated Parmesan cheese and ¼ cup chopped fresh parsley.

Mix together and set aside.

Preheat oven to 425 F. Grease rimmed baking sheet with 1 tbsp olive oil. Arrange 6 (7 oz) boneless, skinless chicken breasts in center of pan. Next, arrange 12 oz fresh or frozen broccoli florets around the chicken. Sprinkle everything with stone house seasoning (I use a chicken seasoning mix from the spice aisle in the grocery store).

Bake until chicken is cooked through and thermometer reads 160 F about 25-30 minutes.

Top the chicken breasts with the cheese, parsley and garlic mixture.

Broil until cheese is melted and broccoli is deeply browned, 3 minutes.

Remove the pan from the oven, tent with foil and rest 5 minutes. Serve warm.
