Szechuan Grilled Mushrooms

I stole this recipe for Szechuan Grilled Mushrooms from a cookbook called Grilling: More than 100 Recipes. This grilled vegetable recipe has an Asian flavor. You can serve it with any Asian inspired main dish or just a spicy side dish with anything else you can grilling. This recipe is very easy to make. Mushrooms are marinated with soy sauce, peanut oil, sesame oil, garlic and red pepper flakes. Then the marinated mushrooms are placed on skewers before grilling. Another tasty way to eat mushrooms.

Did you know? Mushroom is the colloquial name for approximately 38,000 varieties of fungi that have mycelia (threadlike roots) and often a distinctive cap and stem structure. Most varieties grown only in the wild, but more and more are being cultivated. Mushrooms can be sold fresh, dried, canned and frozen.⁵ (see more trivia in the Trivia tab)

Wash 1 lb large mushrooms. Then place the mushrooms in a large resealable food storage bag. (I like using white button mushrooms, you can use any whole mushroom you like, such as baby bellas.)

Soak wooden skewers in water for 20 minutes; set aside. Next combine 2 tbsp soy sauce, 2 tsp peanut or vegetable oil, 1 tsp dark sesame oil, 1minced clove of garlic and ½ tsp crushed Szechuan peppercorns or red pepper flakes in small bowl.

Prepare grill for direct cooking. Thread mushrooms onto skewers. (Of course the day I was going to grill these mushrooms it was pouring rain outside. So I grill them inside on a flat skillet.)

Grill mushrooms over medium heat 10 minutes or until lightly browned, turning once.

Serve immediately. You can serve on the skewers or off.

Ingredients

  • 1 lb large mushrooms
  • 2 tbsp soy sauce
  • 2 tsp peanut or vegetable oil
  • 1 tsp dark sesame oil
  • 1 clove garlic minced
  • ½ tsp crushed Szechuan peppercorns or red pepper flakes

Instructions

  1. Place mushrooms in a large resealable food storage bag. Combine soy sauce, peanut oil, sesame oil, garlic and peppercorns in small bowl; pour over mushrooms. Seal bag; turn to coat. Marinate at room temperature for 15 minutes.
  2. Soak wooden skewers in water for 20 minutes. Prepare grill for direct cooking. Thread mushrooms onto skewers.
  3. Grill mushrooms over medium heat 10 minutes or until lightly browned, turning once. Serve immediately.
