Szechuan Grilled Mushrooms

This grilled vegetable recipe has an Asian flavor. Mushrooms are marinated with soy sauce, peanut oil, sesame oil, garlic and red pepper flakes. The marinated mushrooms are placed on skewers before grilling.

Ingredients

  • 1 lb large mushrooms
  • 2 tbsp soy sauce
  • 2 tsp peanut or vegetable oil
  • 1 tsp dark sesame oil
  • 1 clove garlic minced
  • ½ tsp crushed Szechuan peppercorns or red pepper flakes

Instructions

  1. Place mushrooms in a large resealable food storage bag. Combine soy sauce, peanut oil, sesame oil, garlic and peppercorns in small bowl; pour over mushrooms. Seal bag; turn to coat. Marinate at room temperature for 15 minutes.
  2. Soak wooden skewers in water for 20 minutes. Prepare grill for direct cooking. Thread mushrooms onto skewers.
  3. Grill mushrooms over medium heat 10 minutes or until lightly browned, turning once. Serve immediately.
