Fish and Fries

I stole this recipe for Fish and Fries from a cookbook called Taste of Home: Copycat Favorites who stole it from Janice Mitchell from Aurora, CO. This recipe for homemade fish sticks is so delicious you won’t want to make the frozen version again. White fish, such as cod, is cut into pieces. Then the pieces are dredged in flour, then dipped in an egg wash and then coated with a mixture of cornflakes, Parmesan cheese and cayenne pepper. Next the breaded fish are placed on a baking sheet. The fish is baked for 10 minutes or until flaky. Fries are a perfect side dish for these fish sticks. This recipe is an easy way to serve the fish of the day.

Peel and cut 1 lb potatoes lengthwise into ½ inch thick slices; cut slices into ½ inch thick sticks. In a large bowl, toss potatoes with oil and ¼ tsp pepper.

Transfer the potatoes to a 15x10x1 inch baking pan coated with cooking spray. Bake at 425 F, uncovered, 25 to 30 minutes or until golden brown and crisp, stirring once.

Cut 1 lb haddock or cod filets into pieces.

In a shallow bowl, toss ⅔ cup crushed cornflakes with 1 tbsp grated Parmesan cheese and ⅛ tsp cayenne.

Then in another bowl mix ⅓ cup AP flour and ¼ tsp pepper.

In a third bowl whisk together 1 large egg and 2 tbsp water. Then dip fish in flour mixture to coat both sides; shake off excess.

Next dip the fish into the egg mixture.

Lastly dip the fish in the corn flake mixture, patting to help coating adhere.

Place the coated fish on a baking sheet coating with cooking spray.

Bake roughly 10 to 12 minutes or until fish just begins to flake easily with a fork.

Serve and enjoy!

  • cup AP flour
  • ¼ tsp pepper

  • 2 tbsp water
  • cup crushed cornflakes
  • 1 tbsp grated Parmesan cheese
  • tsp cayenne pepper
  • 1 lb haddock or cod filets
