Baked Oatmeal Cups

I stole this recipe for Baked Oatmeal Cups from dinneratthezoo.com. These delicious oatmeal cups are quick and easy to make. Old fashioned oats, baking powder, cinnamon, brown sugar, applesauce, milk, eggs, butter and vanilla are added together in a bowl. Then the mixture is stirred until blended, then spooned into muffin tins. Next the oatmeal cups are baking until golden brown. This breakfast recipe is a delicious way to eat oatmeal.

The ingredients for this recipe are: 3 cups old fashioned oats, 1 tsp baking powder, ½ tsp ground cinnamon, ⅓ cup brown sugar, ½ cup applesauce, 1 ½ cups milk, 2 eggs, 3 tbsp butter and 1 tsp vanilla extract

Preheat the oven to 350 F. Coat the wells of a 12 cups muffin tin with cooking spray. Then add the oats, baking powder, cinnamon and brown sugar to a large bowl.

Next add applesauce, milk, eggs, butter and vanilla extract to the bowl.

Stir well to combine, I add chopped pecans at this step.

Spoon the oat mixture into the prepared muffin tins.

Bake for 20 to 25 minutes or until golden brown. Cool in the tin for 5 minutes, then transfer to cooling rack to cool.

Enjoy as is or with syrup or berries.
