These delicious oatmeal cups are quick and easy to make. Old fashioned oats, baking powder, cinnamon, brown sugar, applesauce, milk, eggs, butter and vanilla are added together in a bowl. Then the mixture is stirred until blended, then spooned into muffin tins. Next the oatmeal cups are baking until golden brown.

Ingredients
3cupsold fashioned oats
1tspbaking powder
½tspground cinnamon
⅓cupbrown sugar
½cupapplesauce
1 ½cupsmilk
2eggs
3tbspbuttermelted
1tspvanilla extract
Instructions
Preheat the oven to 350 F. Coat the wells of a 12 cups muffin tin with cooking spray.
Add the oats, baking powder, cinnamon, brown sugar, applesauce, milk, eggs, butter and vanilla extract to a large bowl.
Stir until well blended.
Spoon the oat mixture into the prepared muffin tins.
Bake for 20 to 25 minutes or until golden brown. Cool in the tin for 5 minutes, then transfer to cooling rack to cool.
Serve with syrup and berries.
Store in covered container in a refrigerator for up to 5 days. Microwave 20 to 30 seconds to warm.
Recipe Notes
I add chopped pecans to the mixture before baking.
