Baked Oatmeal Cups

These delicious oatmeal cups are quick and easy to make. Old fashioned oats, baking powder, cinnamon, brown sugar, applesauce, milk, eggs, butter and vanilla are added together in a bowl. Then the mixture is stirred until blended, then spooned into muffin tins. Next the oatmeal cups are baking until golden brown.

Ingredients

  • 3 cups old fashioned oats
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • cup brown sugar
  • ½ cup applesauce
  • 1 ½ cups milk
  • 2 eggs
  • 3 tbsp butter melted
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350 F. Coat the wells of a 12 cups muffin tin with cooking spray.
  2. Add the oats, baking powder, cinnamon, brown sugar, applesauce, milk, eggs, butter and vanilla extract to a large bowl.
  3. Stir until well blended.
  4. Spoon the oat mixture into the prepared muffin tins.
  5. Bake for 20 to 25 minutes or until golden brown. Cool in the tin for 5 minutes, then transfer to cooling rack to cool.
  6. Serve with syrup and berries.
  7. Store in covered container in a refrigerator for up to 5 days. Microwave 20 to 30 seconds to warm.

Recipe Notes

I add chopped pecans to the mixture before baking.
