Cheesy Breakfast Egg Rolls

I stole this recipe for Cheesy Breakfast Egg Rolls from tasteofhome.com who stole it from Anne Ormond from Dover, NH. This delicious breakfast recipe is fancy enough for a holiday brunch. Breakfast sausage is cooked and crumbled. Then shredded cheese and green onions are mixed with the sausage. Next eggs are whisked with milk, salt and pepper and cooked in a skillet then added to the sausage mixture. Egg roll wrappers are filled with ¼ cup of the egg mixture. The wrapper is rolled up around the filling, then cooked in an air fryer. This recipe is an easy way to use less eggs to feed a crowd when prices increase.

The ingredients for this recipe are: ½ lb bulk pork sausage, ½ cup shredded sharp cheddar cheese, ½ cup Monterey Jack cheeses, 1 tbsp chopped green onions, 4 large eggs, 1 tbsp milk, ¼ tsp salt, ⅛ tsp pepper, 1 tbsp butter and 12 egg roll wrappers

Cook sausage in skillet over medium heat until no longer pink, 4 to 6 minutes, breaking into crumbles.

Drain. Stir in the cheese and green onions.

Then in a small bowl, whisk eggs, milk, salt and pepper. Melt butter in skillet. Next cook eggs until thickened.

Stir in sausage mixture.

Preheat air fryer to 400 F. Place ¼ cup filling on wrapper.

Moisten edges with water. Roll up, then press to seal edges. Repeat with remaining filling. Place egg rolls into sprayed air fryer.

Cook for 3 to 4 minutes. Turn egg rolls over and spray again, cook 3 to 4 minutes longer. Repeat with remaining wrappers.

Serve and enjoy!
