Overnight Breakfast Burrito Casserole

I stole this recipe for Overnight Breakfast Burrito Casserole from plainchicken.com. This delicious breakfast starts the night before serving. Breakfast sausage and hash browns are cooked in a skillet. Then cheddar cheese is added to the meat mixture. Next the mixture is split between tortillas and rolled up and placed in a baking dish. A mixture of eggs and half-and-half is poured over the tortillas. Then the pan is covered and refrigerated overnight. The tortillas are baked for 30 minutes then covered with cheese and baked again until the cheese melts. These breakfast burritos are a delicious way to start the day without a lot of guilt.

The ingredients for this recipe are: 16 oz roll breakfast sausage, 20 oz package refrigerated hash browns, 2 ½ cups shredded cheddar cheese, 6 eggs, 2 cups half-and-half, 10 flour tortillas, salt and pepper

In a large skillet over medium-high heat, cook sausage until no longer pink. Remove sausage from skillet.

Then add hash browns to skillet and cook until starting to brown.

Spray a 9×13 baking dish with cooking spray. Mix together sausage, hash browns and 2 cups of cheddar cheese.

Divide meat and cheese mixture between tortillas.

Roll up each tortilla and place seam side down in the baking dish.

Whisk together eggs and half-and-half.

Pour over tortillas.

Cover with foil and refrigerate overnight. When ready to bake, preheat oven to 350 F. Bake uncovered for 30 to 40 minutes. Remove foil and sprinkle with remaining ½ cup of cheese over burritos.

Bake for 5 to 10 minutes more, until cheese has melted.

Scoop out and serve with sour cream and salsa.
