This delicious breakfast recipe is fancy enough for a holiday brunch. Breakfast sausage is cooked and crumbled. Then shredded cheese and green onions are mixed with the sausage. Next eggs are whisked with milk, salt and pepper and cooked in a skillet then added to the sausage mixture. Egg roll wrappers are filled with ¼ cup of the egg mixture. The wrapper is rolled up around the filling, then cooked in an air fryer.

Ingredients
½lbbulk pork sausage
½cupshredded sharp cheddar cheese
½cupMonterey Jack cheeses
1tbspchopped green onions
4large eggs
1tbspmilk
¼tspsalt
⅛tsppepper
1tbspbutter
12egg roll wrappers
Instructions
Cook sausage in skillet over medium heat until no longer pink, 4 to 6 minutes, breaking into crumbles. Drain. Stir in the cheese and green onions. Remove from skillet and wipe clean.
In a small bowl, whisk eggs, milk, salt and pepper. Melt butter in skillet. Then cook eggs until thickened. Stir in sausage mixture.
Preheat air fryer to 400 F. Place ¼ cup filling on wrapper. Moisten edges with water. Roll up, press to seal edges. Repeat with remaining filling.
Place egg rolls into sprayed air fryer. Cook for 3 to 4 minutes. Turn egg rolls over and spray again, cook 3 to 4 minutes longer. Serve with salsa.
