Sausage Egg Muffin Casserole

I stole this recipe for Sausage Egg Muffin Casserole from cookingwithjanica.com. This tasty breakfast is easy to make and perfect for a holiday breakfast or brunch! English muffins are cut into six pieces. Then half of the English muffin pieces are in the bottom of a baking dish. Next cooked breakfast sausage and shredded cheese are sprinkled on top. One more layer is made with the remaining muffin pieces, sausage and cheese. Eggs, milk, salt and pepper are whisked together and poured over the mixture in the pan. Then the casserole is baked until golden. This recipe tastes just like an Egg McMuffin without having to use any special tools.

The ingredients for this recipe are: 8 English Muffins, 8 oz breakfast sausage, 1 ½ cup shredded cheddar cheese, 5 eggs, 1 ¼ cup milk, 1 ½ tsp salt and ½ tsp pepper

Cook the sausage in a skillet, crumble and set aside.

Preheat oven to 325 F. Grease an 8×8 baking dish with non-stick spray. Then cut each English muffin into six pieces. Place half of the cut muffins into the bottom of the dish in a single layer.

Next cover the English muffins with half of the cooked breakfast sausage, then layer with half of the cheese.

Add one more layer of English muffins, sausage, and then cheese. In a bowl, whisk together the eggs, milk, salt and pepper.

Pour the egg mixture evenly over the casserole.

Bake for 40 to 50 minutes until center is cooked through.

Let cool for 5 minutes, then cut and serve.
