Blizzard Cookies

I stole this recipe for Blizzard Cookies from sugarspunrun.com. These cookies are perfect for winter. First butter and cream cheese are mixed together. Then granulated and brown sugar are mixed in with an egg and vanilla. Next in a separate bowl flour, cornstarch, baking soda and salt are mixed together before adding to the butter mixture. Then white chocolate chips and sprinkles are stirred in. Before baking the dough is refrigerated. The chilled dough is rolled into balls and topped with more sprinkles, then baked. After cooling the cookies are drizzled with melted chocolate. This recipe is perfect for anyone who wants to start celebrating Christmas.

Cream together 1 cup butter and 4 oz cream cheese until well combined.

Then add 1 cup granulated sugar and ½ cup brown sugar and beat on medium-high speed for 2 minutes, until light and fluffy.

Next add 1 large egg and 1 tsp vanilla extract, beat until combined.

In a separate bowl, whisk together 3 ½ cups flour, 1 tsp cornstarch, 1 tsp baking soda and ¼ tsp salt. With the mixer on low speed, gradually add the flour mixture to the butter mixture until combined. Stir in 1 ½ cups white chocolate chips on low speed.

Add ¼ cup colored sprinkles and stir until just combined.

Cover and transfer to a refrigerator to chill for 30 minutes. Preheat oven to 350 F and line cookie sheets with parchment paper. Scoop dough into 1 ½ inch dough balls. Place on parchment lined cookie sheets and add additional sprinkle if desired.

Bake for 8 to 10 minutes until golden brown.

Allow to cool for 10 minutes before transferring to a cooling rack to cool completely. Drizzle with melted chocolate or candy melts.

Ingredients

  • 1 cup butter softened to room temperature
  • 4 oz cream cheese softened to room temperature

Instructions

  3. Add egg and beat until combined.
  4. Stir in vanilla extract.
  5. In a separate bowl, whisk together flour, cornstarch, baking soda and salt.
  6. With the mixer on low speed, gradually add the flour mixture to the butter mixture until combined.
  7. Stir in white chocolate chips on low speed. Add the sprinkles and stir until just combined.
  8. Cover and transfer to a refrigerator to chill for 30 minutes.
  9. Preheat oven to 350 F and line cookie sheets with parchment paper.
  10. Scoop dough into 1 ½ inch dough balls. Place on parchment lined cookie sheets and slightly flatten with the bottom of a clean glass. Add additional sprinkle if desired.
  11. Bake for 8 to 10 minutes, remove from oven and allow to cool for 10 minutes before transferring to a cooling rack to cool completely.
