Pumpkin Pie Cake

I stole this recipe for Pumpkin Pie Cake from a cookbook called 12 Days of Christmas with Six Sisters’ Stuff: 144 Ideas for Traditions, Homemade Gifts, Recipes and More. This dessert is perfect for Thanksgiving. First pureed pumpkin is mixed with evaporated milk, sugar, eggs, salt, cinnamon and pumpkin pie spice. Then the mixture is poured into a baking dish and dry cake mix is sprinkled on top of the pumpkin mixture. Next melted butter is poured over the cake mix and chopped nuts are sprinkled on top. The cake is baked until brown and set, then served warm. This recipe is perfect for someone who looks forward to the dessert part of Thanksgiving.

The ingredients for this recipe are: 15 oz can pureed pumpkin, 12 oz can evaporated milk, 1 ½ cups granulated sugar, 3 eggs, ½ tsp salt, 1 tsp ground cinnamon, 1 tsp pumpkin pie spice, 1 box yellow cake mix, 1 cup butter and 1 cup chopped pecans or walnuts

First in a large bowl, mix together the pumpkin, evaporated milk, sugar, eggs, salt, cinnamon and pumpkin pie spice.

Preheat oven to 350 F. Grease a 9×13 baking dish and set aside. Then pour the pumpkin mixture into the prepared pan.

Sprinkle dry cake mix evenly over the entire pumpkin mixture. Be sure to use all of the cake mix. Then pour the melted butter evenly over the cake mix. Top with chopped nuts.

Next bake for 55 minutes, until the top begins to brown and set.

Serve warm or cold.
