Hot Chocolate Cookies

I stole this recipe for Hot Chocolate Cookies from lovefromtheoven.com. These easy to make cookies get their flavor from powdered hot cocoa mix. Butter and sugar are beaten with eggs and vanilla. Then flour, hot cocoa mix, salt, baking soda and baking powder are mixed into the dough. Next, chocolate chips are folded into the dough before refrigerating for 30 min. Mallow bits are added to the dough before shaping and baking. These delicious cookies taste just like hot chocolate, perfect for a cold winter day or for Santa.

The ingredients for these cookies are: 1 cup butter, 1 cup sugar, ⅔ cup brown sugar, 2 eggs, 1 tsp vanilla, 3 ¼ cups flour, 4 packages (¾ cup) hot cocoa mix, 1 tsp salt, 1 tsp baking soda, 2 tsp baking powder, 1 cup chocolate chips and 1 cup Mallow Bits

In a bowl combine flour, hot cocoa mix, salt, baking soda and baking powder. (Do not use sugar free hot cocoa mix.)

Then in a separate bowl beat butter and sugars until light and fluffy. Add eggs and vanilla; mix well.

Next gradually beat dry ingredients into butter mixture until blended.

Stir in chocolate chips. Cover and chill for 30 minutes. Then fold in mallow bits into chilled dough. (Do not use mini marshmallows, they will melt in the oven.)

Preheat oven to 350 F. Drop 2 tbsp dough, 2 inches apart, onto baking sheets lined with baking mats or parchment paper.

Bake 9 to 11 minutes or until edges are lightly browned.

Cool on baking sheets 5 minutes, then remove to wire racks and cool.
