Cake Mix Cookies

I stole this recipe for Cake Mix Cookies from allrecipes.com who stole it from Hannah. A great last minute holiday cookie recipe! Boxed cake mix is combined with vegetable oil and eggs to make cookie dough. Red and green sprinkles are mixed together in a small bowl. Cookie dough balls are rolled in the sprinkle mixture before being baked. The baked cookies are festive without any additional decorating needed. A great plus when holidays are quickly approaching. You’ll want to make these cookies again and again.

Add 2 eggs, ½ cup vegetable oil and an 18.25 oz box white cake mix to a medium bowl.

Beat ingredients together on low for 2 minutes then fold in some sprinkles.

Refrigerate dough for 30 minutes. In a small bowl combine red and green sprinkles (the ones that look like small sanding sugar).

Remove the dough from the refrigerator, place the dough balls in the sprinkle mixture and toss to coat.

Place dough balls on a parchment lined cookie sheet.

Bake at 350 F for 12 to 14 minutes.

Let the cookies cool on a cooling rack and enjoy!

Recipe Notes

I make these as Christmas cookies; I mix in red and green sprinkles into the batter. Refrigerate 30 minutes before shaping dough. When I form the balls I use a small cookie scoop and roll them in a mixture of red and green candy sprinkles. My yield is 36 cookies using a small cookie scoop and I bake them for 14 minutes (7 minutes per rack)
