Red Velvet Cookies

I stole this recipe for Red Velvet Cookies from realhousemoms.com. These delicious cookies are perfect for Valentine’s Day. They are quick and easy to make. First red velvet cake mix is combined with melted butter and eggs. Then the dough is scooped onto a baking sheet. After baking the cookies are cooled and drizzled with melted cream cheese frosting. Baking cookies is always a good idea.

The ingredient for this recipe are: 1 box (15.25 oz) red velvet cake mix, 6 tbsp butter, 2 eggs and 1 cup cream cheese frosting.

Preheat oven to 375 F. Line 2 baking sheets with silicone mats or parchment paper. Then in a large bowl, combine cake mix, melted butter and eggs until smooth.

I add 1 cup of white chocolate chips to the batter before baking.

Next use a cookie scoop to portion dough into 1-inch balls and place on baking sheet.

Bake for 9-11 minutes or until set.

Remove from oven and cool on baking sheets for 2 minutes before transferring to wire rack to cool completely. Place frosting in a microwave safe bowl and heat for 30 seconds. Stir frosting and check consistency; the frosting should flow off the spoon easily. Drizzle frosting over the cookies using a criss-cross pattern while cookies are still on wire rack.

Recipe Notes

I add 1 cup of white chocolate chips to the batter before baking. Allow frosting to set before transfer to an airtight container to store. The frosting will be soft but can harden up in the refrigerator.
