Mushroom Rice

I stole this recipe for Mushroom Rice from dinneratthezoo.com. This flavorful side dish is easy to make. First mushrooms are cooked in a skillet. Then uncooked rice, a can of French onion soup and a can of beef consommé is mixed with the mushrooms. Next the mixture is topped with butter slices and baked in the oven. After baking the rice is fluffed and ready to serve. This recipe is another delicious way to eat rice.

The ingredients for this recipe are: ½ cup butter, 12 oz sliced mushrooms, 1 cup long grain rice, 10 oz can condensed French Onion soup, 10 oz can condensed beef consommé and 2 tbsp chopped parsley

First preheat oven to 425 F. Heat 2 tbsp of butter in a nonstick skillet over medium heat. Then add the mushrooms to the pan.

Cook for 5 to 6 minutes or until tender and browned. If the skillet is oven safe, then leave the mushrooms in the skillet, if not then add the mushrooms to a baking dish.

Next sprinkle the uncooked rice over the mushrooms.

Then pour the French onion soup and beef consommé into the pan.

Cut the remaining butter into slices and add it to the pan. Cover the pan and bake for 30 minutes. Next uncover the pan and bake for additional 30 minutes.

Fluff the rice with a fork and stir in parsley.

Serve and enjoy!

Recipe Notes

If using a baking pan instead of an ovenproof skillet, cover with foil for the first 30 minutes.
