Authentic Chinese Crab Fried Rice

I stole this recipe for Authentic Chinese Crab Fried Rice from savorybitesrecipes.com. This delicious homemade fried rice starts with crab meat marinated with brown sugar, sesame oil, oyster sauce, rice wine vinegar and soy sauce. Then a mixture of eggs, salt, pepper and rice wine vinegar are cooked in a skillet. After the eggs are scrambled, then garlic, onions, ginger, peas and carrots are cooked until soft. Additional sauce is added to the pan with cooked rice, crab meat and eggs. Everything is tossed together and cooked for a few minutes, then served with green onions. You can eat this fried rice any way you want.

The ingredients in this recipe are: 1 tsp brown sugar, 1 tsp sesame oil, 1 tsp oyster sauce, 2 tsp rice wine vinegar, 2 tbsp soy sauce, 1 tsp water, ½ tsp white pepper powder, 2 small eggs, salt, ¼ tsp white pepper powder, ½ tsp rice wine vinegar, 2 tbsp butter, 1 tbsp vegetable or sesame oil, 1 tsp ginger, 1 tsp minced garlic, 1 cup frozen green peas and carrots, 1 scallion, 4 cups cooked rice and 1 cup crab meat

Mix the sauce ingredients together.

Then marinate the crab meat in some of the sauce mixture.

Cook the rice and set aside.

In another bowl, whisk the eggs, salt, pepper and rice wine vinegar. Then in a pan add 1 tbsp butter and eggs and cook. Set aside.

Next in the same pan, add 1 tbsp butter and 1 tbsp oil, add the ginger and garlic, toss until fragrant. Add the onion and vegetables and cook until soft.

Then add the marinated crab meat to the skillet and cook.

Next add the scrabbled eggs to the pan.

Add the cooked rice and the remaining sauce and toss to coat.

Top with additional green onions and serve!

Ingredients

  • 4 cups cooked rice Jasmine/Basmati, refrigerated
  • 1 cup crab meat

Sauce:

  • 1 tsp brown sugar
  • 1 tsp sesame oil
  • 1 tsp oyster sauce
  • 2 tsp rice wine vinegar
  • 2 tbsp soy sauce
  • 1 tsp water
  • ½ tsp white pepper powder

Scrambled eggs:

  • 2 small eggs
  • Salt
  • ¼ tsp white pepper powder
  • ½ tsp rice wine vinegar
  • 2 tbsp butter

Vegetables:

  • 1 tbsp vegetable or sesame oil
  • 1 tsp ginger minced
  • 1 tsp minced garlic
  • 1 small red onion chopped
  • 1 cup frozen green peas and carrots
  • Salt
  • 1 scallion green chopped

Instructions

  1. Soak rice for 1 hour before cooking. Cook the rice the night before and refrigerate.
  2. Mix the sauce ingredients together. Marinate crab in some of the sauce mixture.

  3. In another bowl, whisk the eggs, salt, pepper and rice wine vinegar.
  4. In a pan add 1 tbsp butter and the crab and cook. Set aside.

  5. In the same pan and the eggs and scramble to make tiny pieces. Set aside.
  6. In the same pan, add 1 tbsp butter and 1 tbsp oil, add the ginger and garlic, toss until fragrant.
  7. Add the onion and vegetables and cook until soft. Add the rice, crab, eggs and mix well.

  8. Add the sauce mixture and mix well. On high heat toss well until rice is cooked well. Sprinkle some water over the rice, cover and cook for a few minutes.
  9. Add more oil if needed, top with green onions. Serve!

Recipe Notes

Shrimp can be substituted for the crab.
