Pecan Crusted Chicken Tenders

This delicious chicken recipe can be a main dish or an appetizer. Chicken tenders are dredged in flour, then in a mixture of milk and eggs. Next the chicken is coated in a mixture of crushed cornflakes, chopped pecans and salt. The basket of an air fryer is lined with foil and the chicken is placed inside and cooked in batches until golden.

Ingredients

  • ½ cup AP flour
  • ½ cup milk
  • 1 egg
  • 1 cup cornflakes cereal crushed
  • cup finely chopped pecans
  • ¾ tsp salt
  • 1 ¼ to 1 ½ lbs chicken tenders cut in half lengthwise

Instructions

  1. Place flour in a shallow dish. Beat the milk and egg in another shallow dish. Combine cornflakes crumbs, chopped pecans and salt in a third shallow dish.

  2. Dip both sides of the chicken in the flour, then in the egg mixture, letting excess drip back into the dish. Roll the chicken in the crumb mixture to coat completely, pressing crumbs into chicken to adhere.
  3. Preheat air fryer to 390 F. Line basket with foil; spray with nonstick cooking spray.
  4. Cook in batches 18 to 20 minutes or until chicken is no longer pink in center. Cool completely.
