Christmas Cheesecake Cookies

I stole this recipe for Christmas Cheesecake Cookies from yellowblissroad.com. These festive cookies start with beating cream cheese and butter together. Then sugar, eggs and vanilla are mixed in. Flour, baking powder and salt are mixed together. Next the dry ingredients are added to the butter mixture. The mixture is split into three bowls. One bowl is dyed green, one red and the last bowl is left undyed. A teaspoon of each of the three doughs are rolled together to create a marbling effect. Then the dough baked until the cookies start to brown on the bottom. These cookies are perfect for sharing for Christmas or just for you.

The ingredients for this recipe are: 8 oz cream cheese, ½ cup butter, 1 ¼ cup granulated sugar, 2 eggs, 1 tsp vanilla, 2 ½ cups flour, 2 tsp baking powder, ½ tsp salt, red and green food coloring and ½ tsp peppermint extract

Preheat oven to 350 F. Line baking sheet with parchment paper or silicone. Beat cream cheese and butter together at high speed until fluffy and smooth; 1-2 minutes. Then add sugar to the butter mixture and beat until fully incorporated and fluffy; 1-2 minutes. Beat in eggs and vanilla for 1 minute.

Next in a separate bowl whisk together the flour, baking powder and salt. Gradually add the dry ingredients to the butter mixture and stir just until incorporated. Do not over mix!

Separate the dough into 3 small bowls. Refrigerate for 15 minutes. Once chilled, to one bowl add in red food coloring and incorporate into the dough until desired color is reached. Then add the peppermint extract with green food coloring to another bowl.

Take ½ tbsp of each color in your hands and roll together to create marbling effect. Place on prepared baking sheet.

Bake at 350 F for 10-11 minutes. Cookies will be light in color, not browned, just starting to brown on bottom.

Cool on baking sheet, then transfer to cooling rack.

  8. Cool on baking sheet, then transfer to cooling rack.
