Roasted Panko Parmesan Broccoli

I stole this recipe for Roasted Panko Parmesan Broccoli from melissassouthernkitchen.com. This recipe is another tasty way to eat broccoli! Broccoli florets are mixed with chopped onions and minced garlic cloves. Olive oil is poured over the broccoli mixture, then breadcrumbs, Parmesan cheese, Italian seasoning, garlic salt, black pepper and red pepper flakes are mixed with the broccoli. Once everything is combined, the mixture is spread on a baking sheet and roasted until the broccoli is crisp. This recipe is so tasty, even someone who doesn’t like broccoli (or wonders why someone would eat it) will like it.

Clean and separate 2 lbs fresh broccoli florets. (I use frozen broccoli that I thaw and drain first. I highly recommend using the frozen broccoli, it is so much easier and less messy!)

Place the broccoli in a mixing bowl with 3 green onions and 4 minced cloves of garlic.

Spray baking sheet with non-stick spray or use parchment paper. Preheat oven to 425 F. Pour ⅓ cup olive oil over the broccoli. Toss gently to coat. Then add ¼ cup Panko breadcrumbs, ¼ cup Parmesan cheese, 1 tsp dry Italian seasoning, 1 tsp garlic salt, Black pepper and ½ tsp red pepper flakes.

Next, mix well. Place on baking sheet in a single layer.

Roast for 20-23 minutes or until crisp tender and crumbs are golden.

Serve warm.

  • 3 green onions sliced, whites only
  • 4 garlic cloves minced

  • 1 tsp dry Italian seasoning
  • 1 tsp garlic salt
  • Black pepper
  • ½ tsp red pepper flakes

Instructions

  2. Separate broccoli into bite size pieces. Place in mixing bowl with onion and garlic.
  3. Pour olive oil over the broccoli. Toss gently to coat. Add in remaining ingredients. Mix well.
  4. Place on baking sheet in a single layer.
  5. Roast for 20-23 minutes or until crisp tender and crumbs are golden.
