Homemade Toaster Strudels

I stole this recipe for Homemade Toaster Strudels from cookingclassy.com. This recipe for Homemade Toaster Strudels is way better than any store bought packaged strudels. A berry jam (of your choice) is mixed in a small bowl with cornstarch. Then puff pastry sheets are cut into six equal rectangles. Next the jam mixture is spread in the center of each rectangle. An egg wash is brushed on the edges before topping with a second rectangle. After baking, the strudels are cooled slightly and drizzled with a delicious homemade icing. Don’t be scared about trying this recipe, toaster strudels are just fancy pop-tarts.

The ingredients for this recipe are: 2 sheets puff pastry, ⅔ cup berry jam (blueberry, strawberry, raspberry, etc.), 2 tsp cornstarch, 1 large egg, 1 tbsp water, 1 ½ tbsp butter, 1 cup powdered sugar, 1 ½ tbsp half and half, ¼ tsp vanilla extract and ⅛ tsp almond extract

Thaw the puff pastry according to instructions. Preheat oven to 400 F. Line a baking sheet with parchment. Place 1 sheet of puff pastry on a lightly floured surface and cut into 6 equal rectangles. Repeat with second pastry sheet.

Then in a small bowl whisk together jam with cornstarch.

Next spoon 1 ½ tbsp jam of over top of half of the pastry rectangles, leaving a ½ inch rim around all the edges uncoated.

Then in a small bowl whisk together the egg with 1 tbsp water. Lightly brush rim of pastry with egg wash using fingertip. Layer remaining puff pastry rectangles over jam coated puff pastry and then press edges to seal.

Brush tops of each strudel lightly with egg wash. Bake until golden brown, about 20 minutes.

While the strudels are cooking, whisk together melted butter, powdered sugar, half and half, vanilla extract and almond extract in a small bowl until well blended. Add more half and half to thin as needed.

At this time, transfer icing to a small resealable bag and then cut tip from one corner to drizzle over slightly cooled strudels.
