Instant Pot Ribs

I stole this recipe for Instant Pot Ribs from cincyshopper.com. These tender ribs start in a pressure cooker. A dry rub is made with salt, brown sugar, black pepper, garlic powder, onion powder, chili powder and crushed red pepper. The rack of ribs is rubbed with the spice mixture. Then a can of Coke and liquid smoke are added to a pressure cooker. Next the ribs are added and cooked on high pressure, then removed from the pot and brushed with barbecue sauce before placing on a warm grill. The ribs are grilled until the sauce browns and becomes sticky. Using the pressure cooker helps keep the ribs tender without them getting tough on the grill.

The ingredients for this recipe are: 2 tbsp kosher salt, 2 tbsp brown sugar, 1 tsp black pepper, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp chili powder, 1 tsp crushed red pepper, 1 rack baby back ribs, 12 oz can coke, ¼ tsp liquid smoke and 1 cup barbecue sauce

Start with combining the spices and sugar together in a bowl to make a rub. Set aside.

Then remove the membrane from the back of the ribs by loosening one end with a knife and grabbing with a paper towel and pulling off. Apply rub to both sides of ribs.

Next place the metal ring inside the pressure cooker. Pour coke and liquid smoke into center of pot.

Then add the ribs to the instant pot, curling them to fit.

Pressure cook on manual HIGH for 30 minutes and allow pressure to release naturally. Then transfer the ribs to a warm grill.

Brush the ribs with the barbecue sauce. Grill for 3-4 minutes until some of the sauce is browned and sticky.

Slice and enjoy. These ribs are a perfect way to start grilling season this Memorial day.
