Southern Macaroni and Pimiento Cheese

I stole this recipe for Southern Macaroni and Pimiento Cheese from thespruceeats.com. This recipe is a Southern take on traditional macaroni and cheese. Mayonnaise, cream cheese, shredded cheese, pimientos and onion powder are mixed together with salt and pepper. Then cooked macaroni noodles are mixed in. Next the macaroni mixture is spread into a baking dish and topped with French fried onions. The dish is baked until hot and bubbly. Since the cheese is not cooked ahead of time, this quick prep side dish is perfect for a weekday meal. Another delicious cheese recipe!

The ingredients for this recipe are: 1 lb elbow macaroni, 1 tbsp salt, ¼ cup mayonnaise, 4 oz cream cheese, 3 cups shredded sharp cheddar cheese, 1 jar (4 oz) diced pimientos, 1 tsp onion powder, black pepper and 1 cup French fried onions

In a large bowl, combine mayonnaise, cream cheese, shredded cheese, drained pimientos and onion powder.

Mix the ingredients together until thoroughly blended. Taste and add salt and pepper, as needed.

Next add the cooked and drained macaroni and mix well. Spoon the macaroni mixture into a sprayed baking dish.

Sprinkle the French fried onions over the casserole.

Bake at 350 F for about 20 to 25 minutes, or until the macaroni and cheese mixture is hot and bubbling around the edges and the topping is lightly browned and crispy.

  • 1 lb elbow macaroni

Instructions

  1. Heat oven to 350 F. Butter a 2 ½ to 3 qt baking dish.
  2. Bring a large pot of 4 quarts of water to boil, add salt. Add macaroni, reduce heat to medium and boil according to package. Drain well.
  3. In a large bowl, combine mayonnaise, cream cheese, shredded cheese, drained pimientos and onion powder. Mix the ingredients together until thoroughly blended. Taste and add salt and pepper, as needed. Add the drained macaroni and mix well.
