This recipe is a Southern take on traditional macaroni and cheese. Mayonnaise, cream cheese, shredded cheese, pimientos and onion powder are mixed together with salt and pepper. Then cooked macaroni noodles are mixed in. Next the macaroni mixture is spread into a baking dish and topped with French fried onions. The dish is baked until hot and bubbly.

Ingredients
1lbelbow macaroni
1tbspsalt
¼cupmayonnaise
4ozcream cheese
3cupsshredded sharp cheddar cheese
1jar(4 oz) diced pimientos, drained
1tsponion powder
Black pepper
1cupFrench fried onionscrumbled
Instructions
Heat oven to 350 F. Butter a 2 ½ to 3 qt baking dish.
Bring a large pot of 4 quarts of water to boil, add salt. Add macaroni, reduce heat to medium and boil according to package. Drain well.
In a large bowl, combine mayonnaise, cream cheese, shredded cheese, drained pimientos and onion powder. Mix the ingredients together until thoroughly blended. Taste and add salt and pepper, as needed. Add the drained macaroni and mix well.
Spoon the macaroni mixture into the prepared baking dish.
Sprinkle the French fried onions over the casserole.
Bake for about 20 to 25 minutes, or until the macaroni and cheese mixture is hot and bubbling around the edges and the topping is lightly browned and crispy.
