Pimento Cheese Macaroni Salad

I stole this recipe for Pimento Cheese Macaroni Salad from plainchicken.com. This pasta salad is quick and easy to make and tastes better the longer it chills. Elbow macaroni noodles are cooked and drained. Then the noodles are mixed with cheddar cheese, jarred pimentos, celery, green onions, mayonnaise, garlic powder, salt and pepper. Next the pasta salad is covered and chilled before serving. Don’t be afraid of the vinegary pimentos, they will mellow when mixed with the other ingredients. All of the ingredients is this pasta salad combine to give it a pimento cheese flavor.

The ingredients in this pasta salad are: 8 oz elbow macaroni, 2 cups shredded cheddar cheese, 4 oz jar diced pimentos, celery, green onions, 1 cup mayonnaise, ⅛ tsp garlic powder, salt and pepper

Cook pasta according to package directions. Then drain and cool.

Slice the green onions to yield ½ cup. Then dice the celery to yield 1 cup and drain the pimentos.

In a large bowl add cooled pasta with the remaining ingredients.

Then combine all of the ingredients until they are mixed evenly.

Cover and chill before serving.

Ingredients

  • 8 oz elbow macaroni 2 cups dry
  • 2 cups shredded cheddar cheese
  • 1 jar (4 oz) diced pimentos, drained
  • 1 cup diced celery
  • ½ cup sliced green onions
  • 1 cup mayonnaise
  • tsp garlic powder
  • Salt and pepper

Instructions

  1. Cook pasta according to package directions. Drain and cool.
  2. Combine cooled pasta with remaining ingredients in a large bowl.
  3. Cover and chill before serving.

  1. I’m definitely going to try this, however it calls for Mayonnaise. Miracle Whip, is NOT Mayonnaise…haha
