Pimento Cheese Macaroni Salad

This pasta salad is quick and easy to make and tastes better the longer it chills. Elbow macaroni noodles are cooked and drained. Then the noodles are mixed with cheddar cheese, jarred pimentos, celery, green onions, mayonnaise, garlic powder, salt and pepper. Next the pasta salad is covered and chilled before serving. Don’t be afraid of the vinegary pimentos, they will mellow when mixed with the other ingredients.

Ingredients

  • 8 oz elbow macaroni 2 cups dry
  • 2 cups shredded cheddar cheese
  • 1 jar (4 oz) diced pimentos, drained
  • 1 cup diced celery
  • ½ cup sliced green onions
  • 1 cup mayonnaise
  • tsp garlic powder
  • Salt and pepper

Instructions

  1. Cook pasta according to package directions. Drain and cool.
  2. Combine cooled pasta with remaining ingredients in a large bowl.
  3. Cover and chill before serving.
