Monterey Chicken Spaghetti

This tasty pasta casserole is perfect for a weeknight. In a large bowl cooked chicken is mixed with cream of chicken soup, sour cream, spinach, Monterey Jack cheese and French fried onions. Then cooked spaghetti is stirred in before everything is poured into a baking dish. Next the pasta is topped with more Monterey Jack cheese and French fried onions before baking until the cheese is melted and golden brown.

Ingredients

  • 12 oz dried spaghetti
  • 4 cups chopped chicken cooked
  • 16 oz container sour cream
  • 2 cans (10.75 oz) condensed cream of chicken soup
  • 10 oz package frozen spinach thawed and drained
  • 2 cups shredded Monterey Jack cheese divided
  • 2 garlic cloves minced
  • 6 oz can French’s French Fried onions divided

Instructions

  1. Preheat oven to 350 F. Spray 9x13 baking pan with cooking spray.
  2. Cook spaghetti and drain.
  3. In a large bowl, combine cooked chicken, cream of chicken soup, sour cream, drained spinach, 1 cup cheese, garlic and ½ can French’s Fried onions.
  4. Stir in cooked spaghetti. Pour into prepared pan.
  5. Sprinkle with remaining cheese and onions on top.
  6. Bake, uncovered, for 40 to 50 minutes.
