Cheesy Scalloped Potatoes

To start this recipe wash and thinly slice 4 russet potatoes into ¼ inch slices. Using a mandoline is the best way to slice the potatoes evenly and easily.

Preheat the oven to 400 F. Butter an 8×8 casserole dish. Arrange the potatoes and 1 sliced onion in the prepared baking dish, staggering potato slices then onion pieces. Then season with salt and pepper to taste.

Next in a medium saucepan, melt 3 tbsp butter over medium heat. Mix in 3 tbsp flour and ½ tsp salt, stir constantly with a whisk for 1 minute. At this time, additional seasoning can also be added.

Then stir in 2 cups milk. Cook until mixture has thickened. Stir in 1 ½ cups shredded cheddar cheese all at once and continue stirring until melted and smooth, about 30 to 60 seconds.

Pour the cheese sauce over the potatoes.

Then cover the dish with foil. Bake 1 ½ hours in preheated oven. For a crisper topping, remove foil and broil for 5 minutes.

Scoop out the potatoes and serve.
