Grilled Pork Tenderloin

I stole this recipe for Grilled Pork Tenderloin from dinneratthezoo.com. A tasty marinade is the secret to this delicious grilled pork tenderloin. Olive oil, honey, Dijon mustard, soy sauce, lemon juice, parsley, thyme, salt, pepper and garlic are combined in a small bowl. Then the marinade is poured over the pork to marinate for several hours. Next the pork is grilled for about 15 minutes, then sliced and served. This recipe is a delicious and easy way to grill this barbecue season. You can make this tasty recipe for Memorial Day, 4th of July or for a family barbecue (it easily doubles).

For this recipe the marinade is made first. You will need: ½ cup olive oil, 2 ½ tbsp honey, 2 tsp Dijon mustard, 3 tbsp soy sauce, 1 tsp lemon zest, 2 tsp lemon juice, 1 tbsp parsley leaves, 1 tbsp thyme leaves, 1 tsp salt, ½ tsp pepper and 2 tsp minced garlic.

Combine all of the marinade ingredients in a small bowl, whisk to mix well.

Then add 2 ½ lbs pork tenderloin to a resealable bag. Pour the marinade over the pork.

Next marinate in the refrigerator for at least 1 hour or up to 8 hours. (At this time I make a second batch of marinade to use as a baste while grilling the pork.) Preheat the grill to medium heat. Place the pork on the grill. Cook for 15-18 minutes, turning occasionally

Each time I turn the pork, I baste the pork with the second batch of marinade.

Once the interior of the pork registers 145 F on a meat thermometer it is done. Then remove the pork from the grill and let the meat rest for 5 minutes. (While the pork is resting, I pour the leftover basting liquid is a small pot and boil it to use it as a glaze.)

After resting, slice the pork.

After I slice the pork, I drizzle on the glaze made from the basting liquid.
