Crunchy Apple French Toast Cups

I stole this recipe for Crunchy Apple French Toast Cups from soyummy.com. This breakfast recipe is a crunchy take on French toast. Bread is torn into bite size pieces and mixed with diced apples and cinnamon cereal then placed in sprayed muffin tins. Eggs, milk and vanilla are mixed together and poured over the bread mixture. After baking you have a crunchy, apple twist on traditional French toast. Perfect when you can’t decide between apples or something sweet.

Preheat the oven to 375 F. In a large bowl, tear 6 slices brioche bread into bite size pieces. Then add 1 cup crushed cinnamon toast crunch cereal.

Next add in 3 diced green apples. (The original recipe called for green apples, but you can substitute with any baking apple you prefer.)

Mix in the apples and cereal until well incorporated with bread pieces.

Then dump a heaping amount into a sprayed muffin tin. (I doubled the recipe to make 12 muffins.)

In a medium bowl, mix together 4 eggs, 1 ½ cups skim milk and ½ tsp vanilla. (I also add some cinnamon and nutmeg at this step. To me, this makes these muffins taste more like traditional French toast.)

Pour the egg and milk mixture over the bread mixture in muffin tins until it reaches the rim of the tin. (Be careful not to overflow, any of the egg mixture that overflows will cook like scrambled eggs.)

Gently press down on the bread mixture. Then bake 40-50 minutes until completely cooked and golden brown. Scoop out and serve. I like to add powdered sugar.

Recipe Notes

I double the recipe to yield 12 muffin cups.
