Crunchy Apple French Toast Cups

This breakfast recipe is a crunchy take on French toast. Bread is torn into bite size pieces and mixed with diced apples and cinnamon cereal then placed in muffin tins. Eggs, milk and vanilla are mixed together and poured over the bread mixture. After baking you have a crunchy, apple twist on traditional French toast.

Ingredients

  • 6 slices brioche bread
  • 3 green apples diced
  • 4 eggs
  • 1 ½ cups skim milk
  • 1 cup cinnamon toast crunch cereal crushed
  • ½ tsp vanilla extract
  • Whipped cream topping

Instructions

  1. Preheat oven to 375 F.
  2. In a large bowl, tear bread into bite size pieces.
  3. Mix in the apples and cereal until well incorporated with bread pieces.
  4. Dump a heaping amount into a sprayed muffin tin.
  5. In a medium bowl, mix together eggs, milk and vanilla. Pour over mixture in muffin tins until it reaches the rim of the tin.
  6. Bake 40-50 minutes until completely cooked and golden brown.

Recipe Notes

I double the recipe to yield 12 muffin cups.
