Slow Cooker Lipton Onion Potatoes

I stole this recipe for Slow Cooker Lipton Onion Potatoes from themagicalslowcooker.com. This is a super easy to make side dish. Thinly sliced potatoes are placed in a slow cooker in a spiral pattern. Then garlic powder, pepper and a packet of Lipton onion soup mix is sprinkled on top of the potatoes. For this recipe you will need 2 lbs thinly sliced russet potatoes, ¼ tsp garlic powder, ¼ tsp pepper, 1 oz packet Lipton onion soup mix and ⅓ cup olive oil.

Add the potatoes to a sprayed slow cooker in a spiral design. Using a mandolin to slice the potatoes will help you get even thickness of the potatoes. (Make sure to do this spiral design, if you stack the potatoes they will not cook evenly.)

Then sprinkle over the garlic powder, pepper and onion soup mix.

Drizzle the olive oil evenly over the potatoes. Cover and cook on HIGH for 4 hours without opening the lid during the cooking time. (If you open the lid while cooking, the potato edges won’t get crispy.)

Gently scoop out the potatoes and serve. (Be careful some of the potatoes might stick.)
