Easy Rotel Mexican Rice

This easy to make rice recipe is a perfect side. Long grain rice is toasted in a skillet with olive oil. Then a can of Rotel tomatoes, vegetable broth, garlic powder, onion powder, salt and pepper are added to the rice. Next the broth is brought to boil, then covered. The rice is covered and cooked until the liquid is absorbed. Shredded cheese is stirred in until melted.

Ingredients

  • 2 cups long grain rice
  • 1 can Rotel tomatoes
  • 2 cups chicken or vegetable broth
  • 1 cup shredded Mexican cheese
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt
  • Pepper
  • 1 cup corn
  • Chopped onion

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add rice and sauté until lightly toasted.
  3. Stir in tomatoes, broth, garlic powder, onion powder, salt and pepper.
  4. Bring to a boil, then reduce heat to low and cover.
  5. Cook for 20 to 25 minutes, or until rice is tender and liquid is absorbed.
  6. Remove from heat, stir in shredded cheese until melted.
  7. Garnish with cilantro.

Recipe Notes

Add chopped onion and corn when toasting the rice.
