
I stole this recipe for Funfetti Cookie Bars from krollskorner.com. These pretty cookie bars contain golden Oreos, white chocolate chips and sprinkles. All-purpose flour, cake flour, cornstarch, baking soda, baking powder and salt are mixed together in a bowl. Then a mixture of butter, sugar, eggs and cake batter extract is mixed with the flour mixture. Next the Oreos, chocolate chips and sprinkles are added to the batter. The batter is pressed into a baking dish and topped with more Oreos and sprinkles before baking until golden. These cookie bars are so delicious, you have to be careful not to eat too much so you don’t get sick.

The ingredients for this recipe are: 2 ½ cups AP flour, 1 ½ cups cake flour, 2 tsp cornstarch, 1 tsp baking soda, 1 tsp baking powder, 1 tsp salt, 1 cup cubed butter, 1 ¼ cup granulated sugar, 4 large eggs, 1 tsp cake batter extract, 25 golden oreos, 1 cup white chocolate chips and ½ cup rainbow sprinkles

Place the butter and sugar into a large bowl. Beat on medium speed and cream the butter for 2 to 3 minutes until light and fluffy.

Then add in the eggs, egg yolks and cake batter extract and blend until mixed. Scrap the butter if needed.

Whisk the AP flour, cake flour, cornstarch, baking soda, baking powder and salt in another bowl. Turn the mixer to low and gradually add the flour mixture to the wet ingredients. Add in ¼ cup at a time.

Then add in 15 of the oreos, white chocolate chips and sprinkles and mix until combined.

Spray a 9×13 baking pan dish with non-stick baking spray. Press the dough evenly into the pan using clean hands or the back of a measuring cup.

Break up the remaining 10 Oreos and press onto the top of the dough.

Bake at 325 F for 18 to 20 minutes, or until a toothpick inserted in the middle comes out with a few moist crumbs on it.

Cookie bars will continue to cook in pan once you remove from the oven. Cool completely before cutting into squares and enjoy!

Decorate if desired.
