Honey Berry Sheet Cake

I stole this recipe for Honey Berry Sheet Cake from tasteofhome.com. They stole it from Elisabeth Larsen from Pleasant Grove, Utah. This cake is easy to make and can be made with any berries you want. Sugar, vegetable oil, honey, eggs, orange juice and vanilla are mixed together in a bowl. Then in another bowl flour, baking powder, baking soda and salt are whisked together before being added to the wet ingredients. The batter is poured into a baking pan and topped with berries. Next the cake is baked, then after cooling a glaze made with powdered sugar, honey and milk is drizzled on top of the cake. This cake is a delicious option for breakfast, brunch or a sweet treat any time of the day.

The ingredients for this recipe are: 1 cup sugar, 1 cup vegetable oil, 1 cup honey, 3 large eggs, ½ cup orange juice, 1 tsp vanilla extract, 3 ½ cups AP flour, 1 tsp baking powder, 1 tsp baking soda, ½ tsp salt, 1 cup fresh or frozen raspberries, 1 cup fresh or frozen blueberries, 1 cup powdered sugar, 2 tbsp honey and 2 tbsp milk

In a large bowl, beat sugar, oil, honey, eggs, orange juice and vanilla until well blended.

Then in another bowl whisk together flour, baking powder, baking soda and salt; gradually beat into sugar mixture.

Transfer to a greased 9×13 baking pan. Bake for 15 minutes. Next sprinkle the top of the cake with the fruit.

Bake until a toothpick inserted in center comes out clean, 30 to 35 minutes longer.

Then combine powdered sugar, honey and milk; drizzle over cake.

Slice and serve!

  4. Combine glaze ingredients; drizzle over cake. Serve with additional berries if desired.
