This cake is easy to make and can be made with any berries you want. Sugar, vegetable oil, honey, eggs, orange juice and vanilla are mixed together in a bowl. Then in another bowl flour, baking powder, baking soda and salt are whisked together before being added to the wet ingredients. The batter is poured into a baking pan and topped with berries. Next the cake is baked, then after cooling a glaze made with powdered sugar, honey and milk is drizzled on top of the cake.

Ingredients
1cupsugar
1cupvegetable oil
1cuphoney
3large eggs
½cuporange juice
1tspvanilla extract
3 ½cupsAP flour
1tspbaking powder
1tspbaking soda
½tspsalt
1cupfresh or frozen raspberries
1cupfresh or frozen blueberries
Glaze:
1cuppowdered sugar
2tbsphoney
2tbsp2% milk
Instructions
Preheat oven to 350 F. Grease a 13x9 baking pan. In a large bowl, beat sugar, oil, honey, eggs, orange juice and vanilla until well blended.
In another bowl whisk together flour, baking powder, baking soda and salt; gradually beat into sugar mixture.
Transfer to prepared pan. Bake for 15 minutes. Sprinkle the top of the cake with the fruit. Bake until a toothpick inserted in center comes out clean, 30 to 35 minutes longer. Cool completely in pan on wire rack.
Combine glaze ingredients; drizzle over cake. Serve with additional berries if desired.
