Honey Berry Sheet Cake

This cake is easy to make and can be made with any berries you want. Sugar, vegetable oil, honey, eggs, orange juice and vanilla are mixed together in a bowl. Then in another bowl flour, baking powder, baking soda and salt are whisked together before being added to the wet ingredients. The batter is poured into a baking pan and topped with berries. Next the cake is baked, then after cooling a glaze made with powdered sugar, honey and milk is drizzled on top of the cake.

Ingredients

  • 1 cup sugar
  • 1 cup vegetable oil
  • 1 cup honey
  • 3 large eggs
  • ½ cup orange juice
  • 1 tsp vanilla extract
  • 3 ½ cups AP flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup fresh or frozen raspberries
  • 1 cup fresh or frozen blueberries

Glaze:

  • 1 cup powdered sugar
  • 2 tbsp honey
  • 2 tbsp 2% milk

Instructions

  1. Preheat oven to 350 F. Grease a 13x9 baking pan. In a large bowl, beat sugar, oil, honey, eggs, orange juice and vanilla until well blended.
  2. In another bowl whisk together flour, baking powder, baking soda and salt; gradually beat into sugar mixture.
  3. Transfer to prepared pan. Bake for 15 minutes. Sprinkle the top of the cake with the fruit. Bake until a toothpick inserted in center comes out clean, 30 to 35 minutes longer. Cool completely in pan on wire rack.
  4. Combine glaze ingredients; drizzle over cake. Serve with additional berries if desired.
