Chicken Taquitos

I stole this recipe for Chicken Taquitos from twopeasandtheirpod.com. These delicious chicken taquitos can be a main dish or appetizer. Shredded chicken is mixed with cumin, chili powder, salt, garlic powder, paprika and lime juice. Then shredded cheddar cheese, cream cheese and salsa are added to the chicken. Next the chicken mixture is placed on tortillas and rolled up and placed on a baking sheet. Non-stick cooking spray is sprayed on the taquitos, then baked until golden brown and crispy. The finished taquitos are served with sour cream and salsa.

The ingredients for this recipe are: 2 cups shredded chicken, ½ tsp ground cumin, ½ tsp chili powder, ½ tsp salt, ¼ tsp garlic powder, ¼ tsp paprika, 2 tsp lime juice, 1 cup shredded cheddar cheese and 20 corn tortillas

Cook chicken in a skillet with fajita seasoning.

Then shred the chicken. In a medium bowl, combine the shredded chicken with the cumin, chili powder, salt, garlic powder, paprika and lime juice.

Stir until chicken is well coated with seasonings then added softened cream cheese, ¼ cup salsa and shredded cheese.

Warm tortillas. Place a heaping tablespoon of the chicken mixture in the center of the tortilla.

Roll up tightly. Place the taquito, seam side down on the prepared baking sheet. Continue rolling taquitos until all the filling is gone.

Spray the taquitos generously with non-stick cooking spray. Bake for 15 to 20 minutes or until taquitos are golden brown and crispy.

Remove from oven and serve warm with toppings.

Ingredients

  • 2 cups shredded chicken
  • ½ tsp ground cumin
  • ½ tsp chili powder

  • 1 cup shredded cheddar or Mexican blend cheese
  • 20 corn tortillas

Toppings:

  • Shredded lettuce
  • Diced tomatoes
  • Guacamole
  • Sour cream
  • Green onions
  • Crumbled queso fresco
  • Pico de Gallo
  • Salsa

Instructions

  1. Preheat oven to 425 F. Spray a large baking sheet with nonstick cooking spray and set aside.
  2. In a medium bowl, combine the shredded chicken with the cumin, chili powder, salt, garlic powder, paprika and lime juice. Stir until chicken is well coated with seasonings. Stir in the shredded cheese.

Recipe Notes

Add 6 oz softened cream cheese and ¼ cup salsa to chicken mixture.
