Strawberry Banana Baked Oatmeal

I stole this recipe for Strawberry Banana Baked Oatmeal from inspiredtaste.net. This delicious and hearty breakfast starts the night before serving. Rolled oats are mixed with sugar, baking powder, cinnamon, salt, nuts, strawberries and chocolate chips. Then the oat mixture is added to a baking dish. Next more strawberries, nuts, chocolate chips and banana slices are placed on top of the baking dish. Milk, an egg, melted butter and vanilla are mixed together and poured over the oats and fruit. The pan is covered and refrigerated overnight, then baked in the morning. This oatmeal recipe is so delicious even someone who doesn’t like oatmeal, will like it!

The ingredients for this recipe are: 2 cups old fashioned rolled oats, ⅓ cup light brown sugar, 1 teaspoon baking powder, 1 tablespoon grated orange zest, 1 teaspoon cinnamon, ½ teaspoon salt, ½ cup walnuts, 6 ounces strawberries, ⅓ cup semi-sweet chocolate chips, 2 cups milk, 1 large egg, 3 tablespoons butter, 2 teaspoons vanilla extract and 1 ripe banana

In a large bowl, mix together the oats, sugar, baking powder, orange zest, cinnamon and salt.

Then add half the walnuts, half the strawberries and half the chocolate.

Spread the mixture into a baking dish sprayed with non-stick spray.

Scatter the remaining strawberries, walnuts, chocolate, and banana on top of the oats.

Then in another large bowl, whisk together the milk, egg, butter, and vanilla extract.

Next pour over the oats and fruit. Gently shimmy and shake the baking dish to help the milk mixture go throughout the oats.

At this point, cover pan with foil and refrigerate overnight. Heat oven to 375 degrees F. Bake the oatmeal until the top is golden brown and the milk mixture has set, about 35 minutes.

Slice, serve and enjoy!

  • 1 ripe banana peeled and cut into ½ -inch slices

Instructions

  1. Generously spray the inside of a 2-quart baking dish with cooking spray and place on a baking sheet. In a large bowl, mix together the oats, sugar, baking powder, orange zest, cinnamon, salt, half the walnuts, half the strawberries, and half the chocolate. Add to prepared baking dish.

In another large bowl, whisk together the milk, egg, butter, and vanilla extract, then pour over the oats and fruit. Gently shimmy and shake the baking dish to help the milk mixture go throughout the oats.
  3. At this point, cover pan with foil and refrigerate overnight. Heat oven to 375 degrees F.
  4. Bake oatmeal until the top is golden brown and the milk mixture has set, about 35 minutes. For an extra tasty top, sprinkle a tablespoon or so of brown sugar on top of the oatmeal, and then place back in the oven under the broiler and broil for 20-30 seconds.
