Mixed Berry Crisp

I stole this recipe for Mixed Berry Crisp from cookieandkate.com. This delicious dessert is perfect for summer. Frozen or fresh strawberries and raspberries or your berries of choice are placed into a baking dish. Then the berries are mixed with honey, cornstarch, lemon zest and juice. Next a topping is made with oats, flour, chopped nuts, brown sugar, salt, butter and yogurt. The topping dropped by spoonfuls on top of the berries. Next the crisp is baked until the top is golden brown and the fruit mixture is bubbling. Serve this delicious berry crisp with vanilla ice cream and enjoy!

Did you know? Crisps are a variation on a potpie theme. Instead of topping the filling with pie dough, the filling is topped with cookie crumbs or sweetened oats mixed with bit of fat to assemble a paste. The ingredients for this recipe are: 2 lbs (32 oz, about 5 cups) mixed berries, fresh or frozen, ⅓ cup honey or maple syrup, 3 tbsp cornstarch, ½ tsp orange or lemon zest (optional), 2 tbsp orange or lemon juice, 1 cup old-fashioned oats, ½ cup packed almond flour, ½ cup sliced almonds or chopped pistachios or pecans, ⅓ cup packed brown sugar, ¼ tsp salt, 4 tbsp butter and 3 tbsp plain yogurt

Preheat oven to 350 F. Rinse and drain strawberries and slice into ¼ inch thick pieces. Add to a 9×9 baking dish.

Mix in honey, cornstarch, zest and juice.

Then in a medium mixing bowl, stir together the oats, flour, nuts, sugar and salt.

Mix in yogurt and butter. Stir until the mixture is moistened throughout.

Dollop spoonfuls of the oat mixture over the filling and use your fingers to break up the mixture until it is evenly distributed.

Bake for 40 to 50 minutes, or until the filling is actively bubbling around the edges and the top is lightly golden.

Let the crisp rest for 5 to 10 minutes before serving. Serve with ice cream.
