Mushroom Rice

This flavorful side dish is easy to make. First mushrooms are cooked in a skillet. Then uncooked rice, a can of French onion soup and a can of beef consommé is mixed with the mushrooms. Next the mixture is topped with butter slices and baked in the oven. After baking the rice is fluffed and ready to serve.

Ingredients

  • ½ cup butter divided
  • 12 oz sliced mushrooms
  • 1 cup long grain rice uncooked
  • 10 oz can condensed French Onion soup
  • 10 oz can condensed beef consommé
  • 2 tbsp chopped parsley

Instructions

  1. Preheat oven to 425 F.
  2. Heat 2 tbsp of butter in a nonstick skillet over medium heat.
  3. Add the mushrooms to the pan and cook for 5 to 6 minutes or until tender and browned.
  4. Add the rice, French onion soup, beef consommé to the pan.
  5. Cut the remaining butter into slices and add it to the pan.
  6. Cover the pan and bake for 30 minutes. Uncover the pan and bake for additional 30 minutes.
  7. Fluff the rice with a fork and stir in parsley, then serve.

Recipe Notes

If using a baking pan instead of an ovenproof skillet, cover with foil for the first 30 minutes.
