Grilled Lemon Chicken

I stole this recipe for Grilled Lemon Chicken from a cookbook called Taste of Home: American Summer Cookbook who stole it from Linda Nilsen from Anoka, MN. This delicious grilled chicken gets its lemon flavor from lemonade concentrate. A marinade is made with a mixture of lemonade concentrate, soy sauce, garlic, salt and garlic powder. Then the chicken is marinated with half of the mixture, and the other half is set aside. When the chicken is grilled it is basted with the reserved half of the marinade. Using lemonade concentrate adds a lot of lemon flavor without the acidic taste of lemon juice. Be careful not to overcook the chicken!

The ingredients for this recipe are: ¾ cup thawed lemonade concentrate, ⅓ cup soy sauce, 1 garlic clove, 1 tsp seasoned salt, ½ tsp celery salt, ⅛ tsp garlic powder and 3 to 3 ½ lbs chicken. If the recipe is doubled, an entire container of lemonade concentrate would be used. Any leftover lemonade concentrate can be refrozen to be used for another recipe or to make half a pitcher of lemonade.

In a bowl whisk together soy sauce, garlic, seasoned salt, seasonings and salt until combined. Pour half of the mixture into a container and set aside.

Place chicken in a resealable bag, then pour second half of marinade on the chicken. Marinate in refrigerator. Then drain the chicken, discarding the marinade and place on a warm grill.

Grill the chicken basting with reserved marinade every time the chicken is turned.

Continue grilling for 10 to 20 minutes, until a thermometer reads 165 F.

Serve warm and enjoy!

Ingredients

  • ¾ cup thawed lemonade concentrate
  • cup soy sauce
  • 1 garlic clove minced
  • 1 tsp seasoned salt
  • ½ tsp celery salt
  • tsp garlic powder
  • 2 fryer chicken 3 to 3 ½ lbs each cut up

Instructions

  1. In a bowl whisk together first 6 ingredients until combined. Pour half of the mixture into a container and set aside.
  2. Place chicken in a resealable bag, pour second half of sauce on chicken. Marinate in refrigerator.
  3. If using bone-in chicken grill up to 30 minutes. Grill chicken basting with reserved marinade.

If using boneless chicken grill for 10 to 20 minutes, until a thermometer reads 165 F.
