Smothered Baked Chicken Burritos

I stole this recipe for Smothered Baked Chicken Burritos from carlsbadcravings.com. These delicious burritos start in the slow cooker. Chicken is cooked in a slow cooker with salsa, tomatoes, chiles and spices. Then the chicken is placed in the center of a tortilla and rolled up. Next the burritos are baked in the oven until crispy. While the burritos baked a sauce is made with chicken broth, spices, sour cream, chiles and shredded cheese. The burritos are served by pouring the sauce on top. This recipe is a delicious and easy way to make a restaurant meal from scratch at home.

The ingredients for this recipe are: 2 tbsp olive oil, 1 tbsp butter, 3 tbsp flour, 2 cups chicken broth, ½ tsp cumin, ¼ to ½ tsp salt, ¼ tsp pepper, ½ cup sour cream, ½ can (4 oz) mild chopped green chilies and ½ cup shredded sharp cheddar cheese

In a small bowl combine ½ cup mild salsa, 3-4 tbsp brown sugar, 4 oz can mild diced green chilies, 14.5 oz can fire roasted diced tomatoes, 1 tbsp chili powder, 1 ½ tsp salt, 1 tsp ground cumin, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp smoked paprika, ½ tsp dry oregano, ½ tsp pepper and 1 tsp liquid smoke.

Then add to 2 lbs chicken in the slow cooker and cook on HIGH for 2-4 hours or on LOW for 6-7 hours or until chicken is tender enough to shred.

Shred the chicken and drain any excess liquid from chicken.

Preheat oven to 400 F. Line a baking sheet with foil and add a baking rack on top. Then prepare the burritos by adding a heaping ½ cup filling to each tortilla, top with desired amount of cheese and roll up burrito style.

Next place burritos on a baking rack over a baking sheet and brush both sides with oil or spray with non-stick cooking spray. Cook for 18-20 minutes or until golden.

While the burritos are baking, prepare sauce by melting butter in olive oil in medium saucepan over medium heat. Whisk in flour and cook, stirring constantly for 3 minutes. Reduce heat to low then gradually whisk in chicken broth. Add spices and bring to a simmer while stirring until thickened about 2-3 minutes. Remove from heat and stir in green chilies and cheese until melted, then stir in sour cream.

To serve top burritos with Cheesy Green Chili Sour Cream Sauce.

  • 6 burrito size tortillas
  • 1 cup shredded sharp cheddar cheese

Slow Cooker Mexican chicken

  • 2 lbs chicken breasts
  • 1 tbsp olive oil
  • ½ cup mild salsa
  • 3-4 tbsp brown sugar
  • 4 oz can mild diced green chilies
  • 14.5 oz can fire roasted diced tomatoes drained
  • 1 tbsp chili powder
  • 1 ½ tsp salt
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp dry oregano
  • ½ tsp pepper
  • 1 tsp liquid smoke

Cheesy Green Chili Sour Cream Sauce

  • 2 tbsp olive oil
  • 1 tbsp butter

  • 2 cups chicken broth warmed
  • ½ tsp cumin
  • ¼ to ½ tsp salt
  • ¼ tsp pepper
  • ½ cup sour cream
  • ½ can (4 oz) mild chopped green chilies
  • ½ cup shredded sharp cheddar cheese

Instructions

  1. Prepare Mexican cheese according to recipe directions. Drain any excess liquid from chicken.
  2. Preheat oven to 400 F. Line a baking sheet with foil and add a baking rack on top. Prepare the burritos by adding a heaping ½ cup filling to each tortilla, top with desired amount of cheese and roll up burrito style. Place burritos on the baking rack and brush both sides with oil or spray with non-stick cooking spray. Cook for 18-20 minutes or until golden. Broil to desired crispness, flip over and broil the other side until golden.
  3. Meanwhile, prepare sauce by melting butter in olive oil in medium saucepan over medium heat. Whisk in flour and cook, stirring constantly for 3 minutes. Reduce heat to low then gradually whisk in chicken broth. Add spices and bring to a simmer while stirring until thickened about 2-3 minutes. Remove from heat and stir in green chilies and cheese until melted, then stir in sour cream. Add hot sauce if desired.
