Zucchini Cheese Bread

I stole this recipe for Zucchini Cheese Bread from Fresh from the oven Breads & Rolls insert from Taste of Home Books who stole it from Debi Stile from Efland, North Carolina. This quick bread is delicious with any soup or stew. Flour is mixed with baking powder, baking soda and salt. Then in a separate bowl eggs are whisked together with vegetable oil. The wet ingredients are added to the dry ingredients. Next shredded zucchini, cheddar cheese and onion are folded into the batter before pouring everything into a greased loaf pan. The bread is baked for about an hour before serving. This recipe is another delicious way to eat zucchini.

Start this recipe by shredding 2 medium unpeeled zucchini to yield about 2 ½ cups, set aside.

Then in a large bowl, combine 3 cups flour, 1 tsp baking powder, 1 tsp baking soda and 1 tsp salt.

In another bowl, beat 3 eggs and ¾ cup vegetable oil together.

Next stir the wet ingredients into dry ingredients just until moistened.

At this time fold in the shredded zucchini, 1 cup shredded cheddar cheese and ½ cup chopped onion.

Pour the batter into a greased 9x5x3 inch loaf pan.

Bake at 375 F for 55-65 minutes or until a toothpick comes out clean.

Cool for 10 minutes before removing from pan to a wire rack. Slice and serve warm.

  • 1 tsp baking soda
  • 1 tsp salt

  • 2 ½ cups shredded unpeeled zucchini about 2 medium
  • 1 cup (4 oz) shredded cheddar cheese
  • ½ cup chopped onion

Instructions
