Zucchini Cheese Bread

This quick bread is delicious with any soup or stew. Flour is mixed with baking powder, baking soda and salt. Then in a separate bowl eggs are whisked together with vegetable oil. The wet ingredients are added to the dry ingredients. Next shredded zucchini, cheddar cheese and onion are folded into the batter before pouring everything into a greased loaf pan. The bread is baked for about an hour before serving.

Ingredients

  • 3 cups AP flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 eggs
  • ¾ cup vegetable oil
  • 2 ½ cups shredded unpeeled zucchini about 2 medium
  • 1 cup (4 oz) shredded cheddar cheese
  • ½ cup chopped onion

Instructions

  1. In a large bowl, combine the flour, baking powder, baking soda and salt. In another bowl, beat eggs and oil. Stir into dry ingredients just until moistened. Fold in zucchini, cheese and onion. Pour into a greased 9x5x3 inch loaf pan.
  2. Bake 375 F for 55-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers.
