Parmesan Pastina

I stole this recipe for Parmesan Pastina from cuisineathome.com. Parmesan Pastina is a fancy name for buttered noodles with Parmesan cheese. Noodles are cooked in salted water, and then drained. The pasta is then tossed with butter, Parmesan cheese and parsley. Salt and pepper are added to taste. This is a quick and easy pasta side dish that can be added to any meal. Using small noodles like ditalini or other short pasta are best for this recipe.

Start this recipe by cooking 1 lb dry ditalini pasta in boiling salted water according to package directions.

Drain the pasta and then return to pot.

Next add 4 tbsp butter, ⅔ cup grated Parmesan cheese and 2 tbsp chopped fresh parsley.

Toss well to coat the pasta. The heat from the warm pot and pasta will quickly melt the butter. Then season with salt and pepper.

Serve warm with additional Parmesan cheese and parsley.
