Shake & Bake Cauliflower

Cauliflower is cut up and tossed in a batter made with milk, flour, oil and salt. Then the coated cauliflower is tossed with a mixture of breadcrumbs and Parmesan cheese. Next the cauliflower is spread onto a baking sheet and baked until golden. The finished cauliflower has a crunchy coating and is a great substitute to frying. The ingredients for this recipe are: ½ large head of cauliflower, ¼ cup milk, ¼ cup fine cornmeal or flour, 1-2 tsp oil, 1 tsp salt, ½ cup Italian panko breadcrumbs and 3-4 tsp nutritional yeast or Parmesan cheese

Wash the cauliflower and then remove the leaves and stem. Cut the cauliflower up into florets. (Frozen cauliflower florets can be used as a substitute for fresh cauliflower.)

Finely crush the breadcrumbs in a bag with a rolling pin or use a food processor. Then whisk together the milk, flour or cornmeal, salt and vegetable oil. Next toss the batter with the cauliflower in a large Ziploc bag. Shake the bag to coat the cauliflower.

Preheat oven to 425 F. Then put the cauliflower in a colander to drain off the excess batter.

Next toss the cauliflower with breadcrumbs and cheese in a bowl or a fresh bag. Then arrange the cauliflower in single layer on a parchment lined baking sheet.

Bake in the oven for 35-40 minutes until golden brown.
