Shake & Bake Cauliflower

This recipe for baked cauliflower is a healthy alternative to frying. Cauliflower is cut up and tossed in a batter made with milk, flour, oil and salt. Then the coated cauliflower is tossed with a mixture of breadcrumbs and Parmesan cheese. Next the cauliflower is spread onto a baking sheet and baked until golden. The finished cauliflower has a crunchy coating and is a great substitute to frying.

Ingredients

  • ½ large head of cauliflower
  • ¼ cup milk
  • ¼ cup fine cornmeal or flour
  • 1-2 tsp oil
  • 1 tsp salt
  • ½ cup Italian panko breadcrumbs
  • 3-4 tsp nutritional yeast or Parmesan cheese

Instructions

  1. Finely crush the breadcrumbs in a bag with a rolling pin.
  2. Preheat oven to 425 F. Cut the cauliflower up into florets.
  3. Whisk together the ingredients except the breadcrumbs and cheese, and then toss with cauliflower in a large Ziploc bag.
  4. Put the cauliflower in a colander to drain off the excess batter. Toss with breadcrumbs and cheese in a bowl or a fresh bag. Arrange the cauliflower in 1 layer on a parchment lined baking sheet.
  5. Bake for 35-40 minutes. Remove from oven and serve.
