Barley Beef Skillet

I stole this recipe for Barley Beef Skillet from The Taste of Home Cookbook: Best Loved Recipes from Home Cooks Like You who stole it from Kit Tunstall from Boise, ID. This one pot meal is great for a winter meal! Ground beef is cooked with onion and garlic. Beef broth and tomato sauce is added in next. Then chopped carrots, tomatoes, zucchini, barley and seasonings are added in. After stirring everything together, the pot is covered and all the ingredients cook over a low flame. Using barley in this dish helps fill you up and is an alternative to rice or pasta.

Chop 2 small carrots, 1 small tomato (also seeded) and 1 small zucchini. Set aside.

In a large skillet add 1 lb lean ground beef and ¼ cup chopped onion. I also added a sprinkle of fajita seasoning.

Cook beef and onion over medium heat until meat is no longer pink. Add 1 clove minced garlic; cook 1 minute longer. Drain.

Next, add 1 can (14 ½ oz) reduced-sodium beef broth, 1 can (8 oz) tomato sauce and 1 cup water.

Stir everything together and bring to boil. Then add in vegetables plus 2 tsp Italian seasoning, ¼ tsp salt and ⅛ tsp pepper.

After stirring everything together, add in 1 cup medium pearl barley.

Reduce heat; cover and simmer 45 to 50 minutes or until barley is tender.

Serve warm!
